▢2 tablespoons olive oil ▢2 medium sweet potatoes skin on diced into bite sized chunks ▢1 white sweet potato diced into bite sized chunks ▢1 ½ teaspoons sea salt ▢½ teaspoon black pepper ▢2 teaspoons minced garlic ▢¼ red bell pepper chopped ▢¼ green bell pepper chopped ▢garlic salt (with parsley flakes) ▢4 eggs mixed ▢½ cup cheese
STEP-1
In a large skillet heat olive oil over medium high heat.
STEP-2
Add the potatoes along with the salt and pepper. Stir.
STEP-3
Cover the pan, lower the heat, and cook for 15 minutes. Stir every 4-5 minutes. Cook until potatoes are almost tender.
STEP-4
Remove the lid, turn to high heat and stir in the garlic, bell peppers, and eggs. Cook for another 5 minutes or until the eggs are cooked and the potatoes are tender and browned.
STEP-5
Remove from heat, add cheese and serve.
