Spinach Artichoke Stuffed Chicken Recipe

INGREDIENTS

8 oz cream cheese softened ▢15 oz artichoke hearts drained and chopped ▢2 tsp minced garlic ▢1 cup baby spinach ▢1 cup swiss cheese ▢1/4 cup freshly grated Parmesan cheese ▢salt and pepper to taste ▢1 lb boneless skinless chicken breasts ▢2-3 tbsp extra virgin olive oil divided

STEP-1

In a large bowl, mix cream cheese, artichoke hearts, garlic, spinach, Swiss cheese and Parmesan cheese together. Season with salt and pepper and set aside.

Drizzle a little olive oil on each chicken breast along with salt and pepper. Make a pocket in the chicken breast by cutting it in the middle but not all the way through the sides.

Stuff spinach and artichoke mixture inside chicken and seal with two or three toothpicks.

STEP-4

Heat remaining oil in large skillet and cook chicken for 15-18 minutes on each side.
