▢1/2 cup vegetable oil ▢1/2 cup sugar ▢1/2 cup brown sugar ▢1 egg ▢1 cup canned pumpkin puree ▢1 tbsp vanilla extract ▢2 cups all-purpose flour ▢1 tsp baking soda ▢2 tsp baking powder ▢1/2 tsp salt ▢2 tsp cinnamon ▢1/3 tsp nutmeg, (optional) ▢1/3 tsp cloves, (optional) ▢1 cup chocolate chips, semi-sweet or milk chocolate ▢1 cup mini chocolate chips
STEP-1
In a large mixing bowl, whisk together oil and sugars. Whisk in egg, pumpkin, and vanilla till smooth.
STEP-2
Combine the dry ingredients in a small bowl and whisk till blended.
STEP-3
Add dry ingredients to the wet ingredients and stir gently till just combined. Fold in the mini chocolate chips.
STEP-4
Drop by spoonfuls onto greased cookie sheets. Bake at 350° for 10-12 minutes or till set in the middle.
STEP-5
After a couple minutes, remove to cooling racks to cool.
