Flourless Banana Chocolate Chip Mini Muffin

INGREDIENTS

1 ½ cups rolled oats (see Tip) 1 teaspoon baking powder ¼ teaspoon baking soda ¼ teaspoon salt 2 large eggs 1 cup mashed ripe banana (about 2 medium-large) ⅓ cup packed brown sugar 3 tablespoons canola oil 1 teaspoon vanilla extract ½ cup mini chocolate chips

STEP-1

Preheat oven to 350 degrees F. Coat a 24-cup mini muffin tin with cooking spray.

Pulse oats in a blender until finely ground. Add baking powder, baking soda and salt; pulse once or twice to blend.

Add eggs, banana, brown sugar, oil and vanilla; puree until smooth.

Stir in chocolate chips. Fill the prepared muffin cups.

STEP-5

Bake until a toothpick inserted in the center comes out clean, 15 to 17 minutes. Cool in the pan on a wire rack for 5 minutes, then turn out to cool completely.
