Cowboy Cookies Recipe

INGREDIENTS

▢2 cups all-purpose flour ▢1 teaspoon baking powder ▢1 teaspoon baking soda ▢2 teaspoons cinnamon ▢1/2 teaspoon salt ▢1 cup butter softened ▢3/4 cup sugar ▢1 cup brown sugar packed down ▢2 eggs ▢1 teaspoon vanilla extract ▢2 cups rolled oats ▢1 cup semisweet chocolate chips ▢1/2 cup shredded sweetened coconut ▢1/2 cup pecans coarsely chopped

STEP-1

Preheat oven to 325°F (175 degrees C).

Sift flour, baking powder, baking soda, cinnamon, and salt in a bowl and set aside.

In a separate bowl or stand mixer, cream butter, white sugar, and brown sugar until light and fluffy. Beat in eggs one at a time. Add vanilla and stir until combined.

STEP-4

Gradually stir in your sifted ingredients. Add rolled oats, coconut, pecans, and chocolate chips and stir until just combined.

Using a cookie scoop or spoon, drop by teaspoonfuls onto greased baking sheets.

Bake at 325 for 11 – 13 minutes. Let cookies cool for 5 minutes before transferring them from the baking sheet.
