1 1/2 lbs chicken breast trimmed and cut into strips (approximately 3 large breasts) ▢1 cup all-purpose flour ▢1 tsp salt ▢1/2 tsp pepper ▢2 eggs ▢3/4 cup bread crumbs (I used Italian but regular works great too) ▢1 cup panko bread crumbs ▢cooking spray
STEP-1
Preheat the oven to 400. Line a baking sheet with parchment paper or spray with cooking spray.
STEP-2
In a shallow dish or pie pan, whisk together the flour, salt and pepper. In another shallow dish, beat the eggs lightly. In a third dish, whisk together the regular and panko bread crumbs.
STEP-3
Dip each piece of chicken in the flour, then in the egg, then in the bread crumbs, and place on the prepared baking sheet.
STEP-4
(I find that it helps to use one hand for dipping in the dry ingredients and one hand for dipping in the eggs, to prevent making a big mess.)
STEP-5
Spray each of the chicken strips lightly with cooking spray.
STEP-6
Bake 20-25 minutes, or until golden brown and cooked through.
