3 lbs carrots sliced ▢1 1/2 cups butter softened ▢6 eggs ▢1 tbsp vanilla extract ▢1/2 cup all purpose flour ▢1 tbsp baking powder ▢3 cups sugar
STEP-1
Boil carrots for approximately 15 minutes, until tender. Drain.
STEP-2
Preheat oven to 350
STEP-3
In a food processor with knife blade, add all ingredients except sugar, and process until smooth.
STEP-4
Add to a large bowl and fold in sugar.
STEP-5
Pour into two, lightly greased, 8×8 pans. Baked at 350 for 1 hour. Enjoy!
