2 tablespoons extra-virgin olive oil 3 cloves garlic, minced 1 pound fresh spinach ¼ teaspoon salt ¼ teaspoon ground pepper 2 tablespoons grated Parmesan cheese 4 teaspoons good-quality balsamic vinegar or balsamic glaze
STEP-1
Heat oil in a large pot over medium heat. Add garlic and cook, stirring, until fragrant, 30 seconds to 1 minute.
STEP-2
Add spinach, salt and pepper; toss to coat.
STEP-3
Cook, stirring, until just wilted, 3 to 5 minutes.
STEP-4
Remove from heat and stir in Parmesan.
STEP-5
Drizzle with vinegar (or glaze) and serve immediately.
